The new year is definitely here. Resolutions are being made and broken, my gym is heaving with well-intentioned women, and Facebook is full of inspirational quotes. I never really make resolutions because I have a memory like a sieve. I do, however, fully support those who make plans to eat healthier/be fitter/strive harder in the new year.
Also involved in this post are two small businesses that you should resolve to get behind this year.

The moment I saw her little bird mug on Etsy I knew that I had to have it. I’ve had it for ages (I even instagrammed it!), but I only got around to including it in the post now.

As a little nod to those people who are slogging it out in the new year, I have some reasonably healthy biscuits. They’re also ridiculously delicious; they’re chewy and coconutty and moist. They’re also gluten free, butter free and free of refined sugars. Tempted yet?
Almond choc chip biscuits:
- ½ cup coconut oil
- ½ cup honey
- 1 egg
- 1 tsp salt
- 1 tsp bicarb
- 1 tsp vanilla
- 2 ¾ cups almond meal
- ½ cup cornflour
- 3/4 cup choc chips
Preheat your oven to 180° and line a flat baking tray.
Cream together the coconut oil and honey. This results in a delicious honey butter type substance. Don’t eat it. I used High Valley honey, which I discovered on a recent trip to Mudgee (that I’m yet to blog about).
Beat the egg into the mixture, along with the salt, bicarb and vanilla.
Add in the almond meal in two halves, mixing thoroughly as you go. Almond meal is coarse, so you don’t want to mix it all in at once and be left with lots of clumps. Add in the cornflour and mix until there are no lumps.
Finally, add in the choc chips. if you want to make this recipe even healthier, replace the choc chips with cacao nibs instead. Conversely, you’re welcome to add in more choc chops if you feel like it as well!
Scoop a modest tablespoon of mixture and shape roughly into a ball onto your prepared tray. If you find that you’re getting too much mixture on your hands, wash them and partly dry them, then carry on mixing. These biscuits are great because they round themselves in the oven, which means less work for you.
Pop them in the oven for 14-15 minutes or until they start to brown.
Serve with a nice cuppa.
