aboveThis week is a bit of a crazy one for me. I’ve been baking to calm my nerves and keep my hands busy. And I’ve loved it. Last week I was a little lax with my recipe posting, but all will come good after this week. The uncertainty that has me baking like a crazy person will lift, and things will become clearer.

As always, I find myself turning to tea and baked goods for comfort – in this case, the tea and baked item are one! Earl grey tea and bundt; could one little morsel be any more perfect? It’s like all of my favourite things rolled into one perfect, adorable little bund(t)le.

Gumbo and rainy day comfort food

bowlThe weather has not been kind to Sydney this week. Earlier in the week it was so uncomfortably humid that leaving the haven of my air-conditioned house made me immediately hot – the air was syrupy with humidity. I made my watermelon and feta salad to cool down on Saturday and had planned to eat the leftovers today.

That was an optimistic plan, because today we had rain; persistent, cold and accompanied by wind.

On the plus side, it was good weather for baking! I baked a lemon and coconut cake similar to these little beauties, and one of my new favourite recipes, gumbo.

Garlic and artichoke conchiglie and a Menulog giveaway

ingredientsYou may or may not have put up with me whinging about my lack of oven recently. The oven seems to have miraculously fixed itself for the moment, but while it was out of action, I had to get creative with everything.

I love baking (stating the obvious slightly, I know) because my dinners tend to be baked, not just my desserts! Lasagnes, roasts…I even like to roast most of my vegies that I make into soups. So having no oven was a struggle.

Chocolate raspberry muffins and familiarity

previewChocolate and raspberries are such a familiar combination. One of those things that I always fall back to when I need a fail-proof result. The sweet and tart notes of the raspberries, mixed with the sophistication of the dark chocolate turn out perfect, comforting little bites of homely muffins.

I always have raspberries in my freezer. They’re an easy way to jazz up a dessert, they’re a great addition to a smoothie, and I happily munch on them straight from the freezer sometimes. Actually, the reason I whipped up this recipe was because I needed to finish off my freezer stockpile.
