Mango coconut pops and Summer tastes

singleThis recipe used up the last of the mangoes that I bought on my way down the NSW east coast. It was sad to see the last of the mangoes go, but these ice blocks celebrated the mangoey goodness thoroughly; the handful of ingredients and killer combination of fruits makes for a simple, delectable summer dessert.

Seriously, eating one of these makes you feel like you’re on some divine tropical island, lazing by the beach and being fed deliciously exotic fruits. Mango and coconut transport me to paradise.

I realise that in summer the last thing you want to do is have the oven on. But believe me, this little treat is so worth it. The pain of having the oven on is short-lived, and the results are delightful.

Chocolate caramel yay pie and new things

sliceThis pie is a little break from the ordinary for me – in any chocolate caramel dessert I make, the chocolate tops the caramel. Not in terms of taste, but in terms of positioning. Take my favourite caramel slice, for example, or my mini caramel egg brownies.

In the interest of chocolate-caramel equality, I thought that I’d switch things up a bit.

Anything combining chocolate and caramel is a winner for me – they’re both things that make me celebrate internally. As I combined these two dashing layers of deliciousness with the sweet, vanilla-laden pastry, all I was thinking was “yay, pie!”

aboveI have a love-hate relationship with Summer. I love the wild-eyed excitement that sunny weather awakens in people. I hate that it’s too hot in the kitchen to bake all day. I love the amazing curls that sea water brings to my hair. I hate how I manage to get awkward burnt patches, despite religiously applying sunscreen. I love Summer fruits. I hate being stuck indoors when all I want to do is be in the glorious sunshine.

To be perfectly honest, I lost the recipe! I had all of the tantalising pictures and could still tell you how delicious it was, but I couldn’t give you the ingredients! One of the problems with me being a blogger is that I’m prone to misplacing things. I used to write my recipes on scraps of paper and then lose them and get disappointed. The Boy bought me a notebook to stop this happening…now I just lose the notebook.

Mooberry review and waffles

wafflesI’ve been putting off writing this post for a while. Not for any sinister reasons , it’s just that this blog post hinges around waffles. Or the making of them.

I have been searching and searching and searching for a waffle maker so that I could post a recipe to accompany the review of Mooberry Neutral Bay which inspired me to make waffles in the first place.

I have had approximately zero luck finding a reasonably priced waffle maker! I thought I might be able to pick one up easily at Kmart or Target, but I have not had any luck. How is this? The few that I have found are either massive or too expensive. Where are the reasonably priced waffle irons that will fit in my small rental kitchen?

So this post has two parts – one part is telling you how awesome my Mooberry experience was. The second part is to implore you to help me find the waffle iron my dreams. Suggestions and donations welcome!

pairI was invited to sample Mooberry’s delights through my blog. I said yes, assuming that I’d get some froyo, which I love. I didn’t realise that Mooberry have so much more to offer than just frozen yoghurt!

I took the Boy along and we had a Mooberry date. It was so cute. The lovely Jamie, who took care of us, started us off with some froyo. The Boy got salted caramel with Maltesers, M&Ms and Tim Tam. It was the ultimate chocolate dessert.

flowersHe’d never had froyo before that day (because he thought it would be gross) and I think it’s safe to say that this serving changed his mind.

I got passionfruit with fresh strawberries and kiwi and lychee pearls. Those little pearls were unreal. They were like little bursts of summer. So you’d think that was it. Mooberry is predominantly a frozen yoghurt place.

YOU’RE WRONG! Perusing the menu I realised that they offer delicious, even healthy brekkie options. I didn’t sample any of these though, I focussed on the sweet things! The Boy and I devoured a hot chocolate each (go Belgian chocolate every time, it’s glorious) and split a waffle and churros.

Jamie explained that they currently have their waffles delivered, but they’re experimenting with making their own. I will definitely be back to try out their house-made waffles, because if they’re better than the current ones, they’ll be divine.
It’s too bad I can’t try and replicate them. Who knew that finding a waffle iron would be so difficult?!
Mooberry Neutral Bay is friendly and funky. There are stag heads and faux grass on the walls, fairy lights adorning bannisters and Instagram pictures on the wall upstairs.

bananaIt’s a pretty photogenic place, as you may have seen, I insta-spammed my followers while I was there!  The staff are sweet and super helpful, the Boy and I had a lovely time.

 

 

Chocolate raspberry slice and high tea

piecesFor those of you who follow me on Instagram, you probably saw the ridiculously delicious things I did over the weekend. I ate a startling amount of delicious food and I do not regret one thing. For a full run down of everything I ate (and did), check out my catch up post.

One of the things which most stuck with me was high tea at the Gunners Barracks Tea Rooms.

Lemon poppy seed cake and processes

smoothI made this cake without the aid of Penelope, my mixer. I use her to do everything because it’s just so effective! Today, however, she stayed at my house while I visited Norman and mum. Faced with the prospect of no mixer and an urge to make a delicious cake, I decided to simply hand mix the ingredients.

I thought that I would begrudge it, but I really enjoyed it. I found that I paid so much more attention to what was going into the batter, and noticed the effect that certain ingredients had when they were added.

unwrappedThese cupcakes are officially my new favourite thing. I love experimenting with lots of different kinds of sweets, but there are a handful that I could cook at the last minute and know that they’d be a hit. There’s mum’s sticky date, cinnamon scrolls and Nutella fudge, just to name a few. These are recipes that I can always rely on to be brilliant. And I know them like the back of my hand, which helps!

Cashew, Cobs & caramel fudge and texture

mixIf you haven’t noticed already, I get kind of excited about food. I love putting unexpected flavours together (basil and chocolate, anyone?), I love putting a twist into classic recipes, and I’m really loving playing around with textures to avoid the sameness that can creep into an indulgence like fudge.

Don’t get me wrong, I ADORE simple, speedy fudge. I would have eaten my Nutella fudge all by myself if my siblings hadn’t found out about it. And the peanut butter fudge? I basically did eat that all by myself!

But this fudge is different. It’s kind of grown up. I’d venture so far as to say that it’s a little bit classy!

The smoothness of the chocolate fudge is gorgeous. It’s rich and suave. If this fudge was a person, it would probably be Richard Branson.

The addition of the jersey caramels, Cobs popcorn and the cashews. Make it brilliant, crunchy and a little bit nuts.

Probably still like Richard Branson…

I was a little worried about posting this recipe, because I thought that it was kind of ugly. It’s bumpy and chunky and not as pretty as the recipes I usually post. But the response to the preview photo I posted yesterday on Facebook was fabulous. I love that you guys see beauty in this chunky little delight.

Personally, I think that the alliteration of these three additives (as well as the taste) makes them the best. No matter what combination of ingredients is in the bite that you take, I promise it will be glorious.

Cobbs, cashew and caramel fudge

  • fudge400g dark chocolate
  • 395g tin sweetened condensed milk
  • 2 tbsp thickened cream
  • ½ cup cashews
  • ¾ cup jersey caramels, roughly chopped
  • 1 cup Cobs salted caramel popcorn

 

caramelGrease a 20cm square tin and line it with baking paper. You only need to grease it very lightly, just so that the baking paper has something to adhere to.

Chop up your caramels. Try not to chop them too finely, they’re beautiful when they’re big and chunky. Leave your cashews and salted caramel popcorn whole. Set these to one side.

meltPop your chocolate and sweetened condense milk into a saucepan over a low heat. Stir constantly until the chocolate is melted and the mixture is smooth. Don’t worry if you can’t get the mixture completely smooth, a few little chunks of chocolate won’t make any difference to the finished product. Add in the thickened cream to give it a glossy sheen.

Take the chocolate mixture off the heat and stir in your caramels, cashews and Cobbs popcorn. Working as quickly as you can, distribute them evenly throughout the mixture, making sure everything is covered in the chocolate fudge. Pour into your prepared pan and smooth it down as best you can. Don’t bother making it perfect, there’s something to be said for delicious, ugly imperfection. refrigerate for at least an hour.

setThat’s it! Sit back and snack on any popcorn or caramels that you’ve got left over.

Remove from the fridge ten minutes before you want to serve it and slice into small squares. It’s super rich, so you only need a mouthful or two!

The great thing is, you can substitute the additives with anything – make a marshmallow, choc-popcorn and walnut fudge. Or M&M, jaffa and white choc chip fudge. There are so many great possibilities.
