I’ve been a bad blogger. I haven’t updated the blog in over a week! I have an excuse, I promise. It’s not very often that one gets an offer of free figs. So when a very generous friend of mine messaged our group of friends offering free figs, everyone jumped at the chance. She even delivered them to our doorsteps!

This cake is an occasion cake. It’s two-tiered, it’s got champagne in it, and POP ROCKS! All those components make it just a little bit more special than the average cake. This cake really embodies New Year’s Eve traditions to me – it’s fun and unexpected, it’s got a little bit of champagne in it, and the pop rocks are like little fireworks for your taste buds. One thing I notice about lots of Halloween-themed baked goods is that they often require fondant skills – something that I definitely don’t have. While I wish that I had the dexterity to craft mini pumpkins or witches hats out of fondant, I just don’t. So I stick to basic decorations… chocolate I can work with! It was The Boy’s birthday on Friday and all he asked for was an “epic cake.” I always make him a birthday cake, so that was no big deal, but having it prefixed with the word epic made the task slightly more daunting.
I love baking, but presentation isn’t always my strongest point – I value taste over looks!
The Boy is a big fan of 4WDing (and I’ve played dutiful partner and tagged along before), so I decided to give him a 4WD themed cake. In the end it wasn’t hard, we just ended up with massive amounts of cake. Like, three tiers of cake. These cupcakes came about because The Boy has a ridiculous obsession with Maltesers. I was never that big a fan of them, but I’m an official convert. I made them yesterday on my day off and he was delighted with them when he came home from work. It reminded me how the tiniest of gestures can change someone’s day completely.
Which is why I thought I’d talk a little about Mental Health Week. For me, food and love go hand in hand, so when I want to let a person know that they’re special to me, or even just that I’m thinking of them, I bake. These cupcakes are officially my new favourite thing. I love experimenting with lots of different kinds of sweets, but there are a handful that I could cook at the last minute and know that they’d be a hit. Hello my lovelies. Christmas is creeping closer and I’m buzzing with excitement. So many things are happening – December always seem to run at such a frantic pace. My younger brother’s birthday was yesterday, friends and I are going for a wee sojourn to Mudgee this weekend, my birthday is edging closer, the Boy’s parents are coming to visit from England, and I’ve got a teapot competition to wrap up oversee (check out this post to find out how to win!)
This is all before Christmas.

I’m ready for Christmas right now. Mother cooked a Christmas pudding last week and filled the house with delicious Christmassy smells. As Christmas draws close, I find it impossible to walk past a bowl full of alcohol soaked sultanas without sneaking a few into my mouth. Sultanas are usually such sad, puckered little things that I’m not too fussed about. Come Christmas, though, I can’t resist their alcohol-bloated siren song.
Sultanas have nothing to do with this post, I just really enjoyed sneaking them out of the mixture! I’m not ready to make full-blown Christmas related recipes thought, it’s still too early, so I’ve made these delightful little cupcakes, which are perfectly festive, but a little understated as well. If you read the last post, all about the unbirthday party I threw, you would have seen the cake that I posted. I’ve put up the recipe for the the cake before (here), but I haven’t posted the Swiss meringue buttercream recipe for some reason. This buttercream is gorgeously silky in texture and makes your cake look super professional.
