Ginger spice cake and excitement

above sliceThe closer it gets to Christmas, the more excited I get. The more excited I get, the more I crave clichéd Christmas foods – give me pudding and rich spiced cakes, mince pies and roasts. It’s funny that Australians indulge in Christmas foods inspired by their northern hemisphere counterparts. Even though Christmas day can be stinking hot, we still want to have delicious cooking smells filling the house.

Christmas day is supposed to be humid and rainy this year, but that’s not going to stop me. Continue reading “Ginger spice cake and excitement”

Chocolate Malteser cupcakes and Mental Health Week

aboveThese cupcakes came about because The Boy has a ridiculous obsession with Maltesers. I was never that big a fan of them, but I’m an official convert. I made them yesterday on my day off and he was delighted with them when he came home from work. It reminded me how the tiniest of gestures can change someone’s day completely.

Which is why I thought I’d talk a little about Mental Health Week. For me, food and love go hand in hand, so when I want to let a person know that they’re special to me, or even just that I’m thinking of them, I bake. If you could bake (or buy baked goods) for a loved one at any point this week, do so! Continue reading “Chocolate Malteser cupcakes and Mental Health Week”

Date and cashew fudge and adventures

icingOne of my friends lives about an hour out of Sydney, so every now and then I go on an adventure to Elderslie. It’s really not that far away from where I live, but it’s so different. There are farms and horses and farm fresh veggies at ridiculously reasonable prices. There are some pretty cute cafes, and I’m slowly working my way through each of them.

It’s beautiful as well – because of the slight climate difference, the cherry blossoms in Sally’s area start earlier than they do in mine.

And around Christmas the jacaranda blooms come out with such vibrancy that it takes your breath away; they carpet the streets with their purple, silken flowers. The reason I’m telling you about her is because she’s a little bit of a health-nut, and I made this dessert to take to her. She runs an Instagram account dedicated to raw/vegan/healthy food…her page is pretty much the antithesis of Baking with Gab! Continue reading “Date and cashew fudge and adventures”

Golden syrup cupcakes and Englishness

syrupA few weekends ago, the boy and I went for breakfast together; yep, we’re pretty cute. Coupley cuteness aside, the café that we ate at had a whole wall of organic and interesting products. One such product that we found was Lyle’s golden syrup…he almost lost it! Being English, Lyle’s golden syrup has a special place in his heart. I don’t think it’s too different to normal golden syrup that we can get here, but the tin it comes in is so iconic and tempting that this simple sweetener has snuck its way into my good books as well.
